Dizzy’s branched out and decided to make her own ginger cookies for Christmas! I think this might be a hint that I’m not going to the little supermarket enough to buy her her ginger nut biscuits. Or she’s realised they’ll be closed for a day on Christmas day… 🙂
Dizzy’s Christmassy gingery cookies:
Ingredients:
- 1.5 tbsp milled flaxseed
- 50g coconut sugar or brown sugar – 25g for mixture and 25g to cover dough with
- 1/2 tsp bicarbonate of soda
- 2 tbsp coconut oil
- 200g almond flour
- 1 tsp vanilla extract
- 1 tbsp molasses
- 1/2 tsp salt
- Ground ginger – this measurement can be up to you. As you know Dizzy loves her ginger so we popped in 4/5 tsp 🙂
- 2 tsp of cinnamon
- Icing sugar
- Marshmallows or any other Christmassy decorations you would like 🙂
How to make:
- Pre heat the oven to 180 degrees
- In a bowl mix together the milled flaxseed and 4 tbsp. of water
- Next pop the coconut oil, coconut or brown sugar, bicarbonate of soda and salt into a blender and blend together
- Add in the flaxseed mixture, almond flour, vanilla extract, molasses, salt, ginger and cinnamon
- Blend until the mixture is holding together and feels slightly sticky to touch
- Place baking paper onto a baking tray ready for the mixture
- Scoop out the mixture in evenly sized scoops
- Roll each one into a ball and cover in coconut flour or sugar
- Flatten each ball to the thickness that you would like your cookies to be and place onto the baking tray
- Bake in the oven for 15 minutes or until slightly brown around the outsides
- Take out cookies and place them on a cooling tray or plate
- While cookies are cooling make your icing sugar by mixing with water
- Once cookies have cooled, generously coat them in icing sugar
- Sprinkle the marshmallows and decorations on the top and enjoy! 🙂

Dizzy did a great job on her ginger cookies – and now there are two recipes so she’ll be twice as happy … I’m sure it was a subtle (or perhaps not-so-subtle) hint to you to never let them run out. It is almost the season for holiday cookies and my mom used to make Christmas cookies and put them in containers in the cupboard … I was always going in there for samples long before Christmas and broke all the lids on the containers by just opening the lids a crack and reaching in. For shame! My friend Ann Marie brought over some treats last Christmas and I had not had any homemade Christmas cookies in almost a decade. They went pretty quickly. 🙂

I’d better not send any more ginger biscuit recipes because Dizzy won’t leave you alone the entire holiday season. Tell her you’ll only bake them contingent on her sharing them with you, even if she doesn’t share with anyone else, at least remember you!
