Dizzy’s Christmassy gingery cookies

Dizzy’s branched out and decided to make her own ginger cookies for Christmas! I think this might be a hint that I’m not going to the little supermarket enough to buy her her ginger nut biscuits. Or she’s realised they’ll be closed for a day on Christmas day… 🙂

Dizzy’s Christmassy gingery cookies:



  1. 1.5 tbsp milled flaxseed
  2. 50g coconut sugar or brown sugar – 25g for mixture and 25g to cover dough with
  3. 1/2 tsp bicarbonate of soda
  4. 2 tbsp coconut oil
  5. 200g almond flour
  6. 1 tsp vanilla extract
  7. 1 tbsp molasses
  8. 1/2 tsp salt
  9. Ground ginger – this measurement can be up to you. As you know Dizzy loves her ginger so we popped in 4/5 tsp 🙂
  10. 2 tsp of cinnamon
  11. Icing sugar
  12. Marshmallows or any other Christmassy decorations you would like 🙂

How to make:

  1. Pre heat the oven to 180 degrees
  2. In a bowl mix together the milled flaxseed and 4 tbsp. of water
  3. Next pop the coconut oil, coconut or brown sugar, bicarbonate of soda and salt into a blender and blend together
  4. Add in the flaxseed mixture, almond flour, vanilla extract, molasses, salt, ginger and cinnamon
  5. Blend until the mixture is holding together and feels slightly sticky to touch
  6. Place baking paper onto a baking tray ready for the mixture
  7. Scoop out the mixture in evenly sized scoops
  8. Roll each one into a ball and cover in coconut flour or sugar
  9. Flatten each ball to the thickness that you would like your cookies to be and place onto the baking tray
  10. Bake in the oven for 15 minutes or until slightly brown around the outsides
  11. Take out cookies and place them on a cooling tray or plate
  12. While cookies are cooling make your icing sugar by mixing with water
  13. Once cookies have cooled, generously coat them in icing sugar
  14. Sprinkle the marshmallows and decorations on the top and enjoy! 🙂

I would like to say that Dizzy shared them with me. But she didn’t. 🙂

    I think you should make a double batch of those, give half to Dizzy, and then share the remaining biscuits with me. I’ll make the coffee, give me a ring before you start out and I’ll put the kettle on!

    These look good and clearly Dizzy approves and has done good product testing! Heads up I have tagged you in the Christmas Tag post.       Thank you so much Anne. 🙂 We’ve stopped doing awards too but a Christmas tag sounds fun and we have been thinking what else we could do for a few Christmassy posts. I shall have Dizzy looking out for it tomorrow. 🙂
